Hospitality students to learn the ins and outs of the food truck industry

GUELPH, Ontario – The trucks are rolling in so students in Orangeville can get a first-hand experience of what it’s like to run a food truck.

On Tues. May 17, local food trucks will visit Westside Secondary School as part of a summative assignment grade 11 Hospitality students are doing on the industry.

Baking/Hospitality Instructor Nicole Leclair said she wanted her students to have the most authentic experience possible, so she arranged for two food truck owners to come to the school and share their experiences with the students. Students will tour the food trucks and gain the true perspective of what it’s like to run one as a business.

Two very different styles of food trucks will be at Westside on May 17 so students can learn about two completely different business models. The first one, Smokenstein, serves up a savory menu featuring smoked foods and local produce. The business also includes travelling to wedding receptions, private parties, corporate events and more. The second truck, Dolcella Gelato, which offers traditional Italian style gelato and sorbetto, made by hand in small batches and served out of a vintage truck.

Leclair wanted to create an assignment that was both captivating and brought out the students’ creative side. The assignment is meant to promote teamwork and collaboration. Students are given a shoe box and food truck template to design their own truck inside and out. They must also create a menu and prepare one item from the menu as if it would be served off the truck. The final part of the assignment requires them to write a report on what food trucks would bring to their community.
